Background of Programme 

Food Science and Technology is an exciting multifaceted discipline intended to prepare students with in-depth knowledge of the biological, physical and engineering sciences to develop new food products, design innovative processing technologies, improve food quality and nutritive value, enhance the safety of foods and ensure the wholesomeness of the food supply chain. The Food Science and Technology programme is focused on applying the principles learned in the basic sciences such as food chemistry, biochemistry, microbiology, food engineering and nutrition to provide the Ghanaian society or consumers with safe, wholesome and attractive food products that contribute to their health and well-being.

Since post-harvest losses are the bane of Ghana’s food insecurity, the need to reduce post-harvest losses cannot be overemphasized. Therefore, Food Science and Technology is expected to play a lead role in addressing and improving food availability. Food Technology is the science and technique applied to agricultural produce after harvest for its protection, conservation, processing, packaging, distribution, and marketing and utilization nutritious food. The Food Science and Technology programme intends to train graduates with both practical and theoretical knowledge in the field of Food Science and Technology. The programme is comprehensive with aspects dealing laboratory practical, pilot plant and computer practical that provide training in Food Science and Technology.

  • To develop knowledgeable critical thinkers who will contribute to the food and beverage industry via excellent leadership, service, and life-ling learning.
  • To conduct relevant and impactful fundamental and applied research that addresses the numerous challenges confronting us as Ghanaians, and the world at large.
  • Provide a sound and independent platform for all food professionals that is, students, researchers, entrepreneurs, policymakers, consumers, etc. for the enhancement of food science and technology.
  • Address the immediate needs of our graduates, that is, opportunities for jobs as young scientists through innovation in SMEs.
  • To continuously evolve strategically as the world, science and the food industry evolve overtime in order to sustainably contribute to the food system.
