14TH ANNUAL EXHIBTION OF THE HOSPITALITY AND TOURISM MANGEMENT DEPARTMENT, TAMALE TECHNICAL UNIVERSITY

Management of Tamale Technical University in collaboration with Hospitality and Tourism Management Department of the University, launched the 14th Annual exhibition under the theme “Promoting Tourism and Culture through local cuisine: the role of Technical Universities”. Culture forms an integral part of every society and it is displayed in many forms such as dance, outfits, festival, marriage, food and many more. In view of this, the final year students of the department of Hospitality and Tourism Department as part of their curriculum, exhibited their innovative ideas through the products such as hibiscus tea, sweet potato bread, moringa and lemon zest, moringa and lemon grass tea, instant wasawasa meal, instant nyombeka meal, dates chocolates, shito mix, fonio bread, sweet potato bread and many more.
The Vice Chancellor, Prof. Abass Braimah was enthused by the creativity of work displayed and urged the students to build upon the knowledge gained from the institution in order to better position themselves in a higher pedestal. He further urged the students’ partner with others in the industry to become job creators than job seekers.
the head of Department of Hospitality and Tourism Management of the University for Development Studies, Dr. Conrad J.W Kudder, said Ghanaians must appreciate their various local dishes and lessen the consumption of continental dishes. He added that, these local sumptuous dishes such as waswasa, banku, fufu and many more, surprisingly, these local meals are much nutritious than the continental dishes which has been the cause of most illness in this generation. He urged the students to be entrepreneurs and hope that there will be collaborations between universities and hospitality industry and other stakeholders to promote tourism and culture through local cuisine.
The event was graced by faculty members and management of the university and there was colourful cultural performance of some indigenous dances of Ghana.
